  • German potato salad. I learned this recipe from m mother, and it sounds off putting but for steak it is a great hot side dish. Ingredients: 1/2 lb of bacon frozen, 2 pounds of potatos, 1 whole onion, 1 cup mayo, 3 tsps of mustard, and two cups of vinegar, salt pepper, and garnish[can be chives, leeks etc], white vinegar. Yukon potatos for best results. Take a large pot and put all the potatos in, cover them with an extra 2-3 inches of water, boil for about 20-30 minutes. Test them with a fork, they should be easy to pierce when they are done. Take them and let them cool. Take the frozen bacon, and cut into small pieces, still forzen of course. Next heat a 12-14" frying pan to hi temp. place the bacon in the pan and fry until its all cryspy and sticking to the pan. Take a spatula and scrape all the gristle off into a bowl, keep about a 1/4 of the bacon grease in the pan for later. This will be added back in later. Reduce heat on the pan to low. Using cast iron pans is my preference. Next take the potato's, still hot, but cool enough to handle, and dice and cut them, into say 1-2" cubes. Place to the side. Dice onions into small pieces, and on low heat say, 3/10 place in pan bacon was cooked in, let them carmalize slightly. Usually 4-5 minutes or more depending on the amount. Add in 1 cup of mayo, 1/2 a cup of vinegar, mustard salt and pepper to onions. stir until thick, vinegar should be pretty smelly at this point, in a good way. Add bacon, stir until its thick and evenly distributed. Finally add in the potato's, stir to cover them, and until serving keep the pan on low heat. This is a really good hot potato salad for colder weather but its popular no matter what. vegan PETArd friends of mine have forsaken their vows to eat some of this tasty potato salad. Other recipes call for sugar and other ingredients to be added, but i like the bitter taste and the mustard's taste in this one, and how strong they are. Experiment and enjoy. A good thing to add to this is steak. A good thick cut with either a dry rub, or marinade works well. +points if you sear the steaks before hand 30 seconds on each surface, in the pan you will make the German potato salad in, then stash them in the oven, between 180-210 degrees until cooked, searing then oven cooking a steak is a damn good way to make them without a grill and they are super juicy since all the juice is locked in from searing.
