Do exo guardians count their death?
do Exo guardians count dying and being rezed as a reset? if they do does that mean the lowest you can be is -2? How do they know how many times they were rebooted before they died?

No. Resets are more involved, they alter the Exos mind. The initial revival erases memories, an affect by the Traveler. A part of the Wager between the Gardner and Winnower. The latter revivals from dying do not alter you in anyway.
