If the weapons are sunset, then they can’t be upgraded past a certain cap. Check the weapon details for the power cap.

I'm not on right at this moment but I can say my weapons are from late 2019, does that mean I should ditch them and find new weapons as I level up?

Yes. Weapons from back then are considered sunset and have a 1100 cap.
