Hi there. The Chaperone quest does not involve resetting your Valor. The last step of the quest is to defeat guardians in Gambit and then visit Amanda Holliday to pick up your weapon. You may have Valor resetting confused with a Crucible pinnacle weapon quest.

I completed the quest myself just last month. Can you provide a screenshot of what it says when you hover over your quest?

If you did reset your Valor, I suggest going to Orbit or playing another match of Crucible to see if your quest updates automatically after. If not, try logging out and back in on your character. If for some reason it doesn't progress, then I'm afraid you'll have to reset your Valor again.

Afaik it's not a step of the actual quest but a prerequisite to be able to obtain the quest to begin with.
