Why hasn’t consoles been given the option to adjust FOV like other games? Also, playing at 10 sensitivity is still pretty slow in my opinion.

Dont even have an option for turning aim assist off or atleast down

It's bingo's old shitty engine they are using. BFV with a slightly increased FOV runs fine on the one X, with few FPS drops.

FoV isn’t an option because of hardware on consoles. Your game would crash/run at an even worse frame rate, and yes that applies even to the enhanced versions of said consoles. Sensitivity options but existing is just Bungie being lazy. I would love at the very least an ADS-specific sens. setting, because I don’t want to sacrifice my 10 look speed, but I’d also like to be able to aim confidently.

Hardware limitations, particularly in the processor department prevent this from being overly possible. Next gen could have it, but if they release a next gen client, we could be right back where we are now, too.

Its been said a million times already, just look at destiny as a whole. The game is barely stabled at 30fps, what makes you think an fov slider will make the game better? Fov takes some fps and increased sens really wont help you on console. I play with a controller on pc and a sens of 10 os perfect, its fast enough to track a hunter sliding at insane speeds and its snappy enough to land headshots. On console a higher sens is a whole different experience, its actually a whole lot worse to have your sens at 10 at 30fps. Trust me, you dont want an fov slider on console, not unless you dont mind stutters and your game possibly crashing because the console cant handle destiny. Just because other games can handle 60fps and fov sliders doesnt mean destiny can.
