If you insist on hard shell, alternate sides you bite from. The tacos from my work use small (3-4 inch diameter) corn tortillas and cook them until they are slightly singed. Stack a small amount of stuff on top and you have an easy 1-2 bite taco, no mess

I found this box of tacos that said if cooked they will be softer but they turned into like a big tortilla chip lol. Probably should have got a smaller size. These were like 5 bites tacos.
