Well you can thank sbmm for that, if the game cant find people on your skill level with decent connections, you will be matched against really good players with decent connections. And also at this point only the hardcore players like myself actually play the game, everyone else is long gone...

Actually I checked destinytracker there are plenty of players (roughly 10k) at my level...I don't understand why most of the times I am not matched against them. Sometimes it's super easy and other times it's super hard

Yeah well lets just hope that it gets better after the update when more people are playing. But honestly i have gotten so much better in the past year because of this, i know its not fun to get your ass kicked but its the best feeling when you improve to the point where your the person who kicks ass in the lobby.
