Having access to both blink AND a dodge maneuver would be broken in PvP.
Besides, the reason that Warlock doesn't have a dodge maneuver is because of their high-range melee attack that also has a bit of tracking to it. Giving them an evade would start to cause problems when you have Warlocks who can close gaps quicker and smack you from a couple feet away before slamming you with a sidearm or shotgun.
That, and it's better for the classes to operate differently rather than trying to make them all more similar.

But Hunters technically have two high ranged melee attacks as well as a dodge and blink, and not to mention Warlocks have the lowest mobility of all 3 classes...

A Warlock's base melee range without thunderstrike is not that far at all. Hunters can equip fast twitch and get their blink strike with a higher range than Warlock's base melee and have their blink strike up constantly. Now yes stormcallers do have a perk that let's them instantly get their melee charged if they take melee damage, but A. They have to take a decent amount of damage to activate that and B. I'm not an advocate for that ability and I think it's unbalanced. And as for the blink and dodge combo, why not? Titans can chain together their jump, shoulder charge, and twilight garrison to dodge and maneuver quickly, and blink isn't even as good as it used to be.
