If towns were like Fallout or Elder Scrolls, shootouts would result in the shooter walking away with everything that wasn't nailed down (f*** over-encumbrance and the logistics of where everything is kept) and a bunch of naked bodies piled up in compromising positions.

No, it'd be someone randomly sticking their hand in other people's pockets without consequences.

True, however that goes along with what I said more than against it. Whether those pockets belong to living or dead individuals is up for considerable debate (the answer is often both).
