Given that when a defender disintegrates an enemy they literally become the defenders shield. I would assume they become atomized. Though for a voidwalker the atoms are not repurposed like for a defender. The bonds holding your being are most likely ripped apart. In a very unpleasant and painful way. But that's just my idea.
