I know in the movies they love to cram it down your throat how there's only the light or the dark, but isn't it technically feasible to be simply an extremely well-learned force user, no unique moral stance chosen?

I wouldn't be surprised if the force is linked directly to emotion in some capacity. It would explain why most emotionless Jedi are only capable of simple mind tricks on the weak minded, moving things, force pushing, etc. While the Sith, who embrace one of the most powerful emotions, hate, are able to create force lightning, devour the force energy from other sensitives (Darth Nihilus), and hell, even control life and death (Darth Plageius).
