I would say this: I don't disagree that man has created gods, but not all gods are created. Why do we seek knowledge and understanding? Why are they such prized possessions that we would delude ourselves in their absence? If we are merely highly evolved animals, there is no reason why we would seek knowledge of anything other than where our next meal is coming from and how to best survive. But you've endowed knowledge and understanding with intrinsic value in and of themselves. Christianity answers this. It says that God has afflicted all men with a longing for wisdom and knowledge of the world we live in and it says that he had made himself known through his creation. We search for knowledge and understanding because God wants us to find him.

http://bible.com/100/rom.1.18-23.nasb For the wrath of God is revealed from heaven against all ungodliness and unrighteousness of men who suppress the truth in unrighteousness, because that which is known about God is evident within them; for God made it evident to them. For since the creation of the world His invisible attributes, His eternal power and divine nature, have been clearly seen, being understood through what has been made, so that they are without excuse. For even though they knew God, they did not honor Him as God or give thanks, but they became futile in their speculations, and their foolish heart was darkened. Professing to be wise, they became fools, and exchanged the glory of the incorruptible God for an image in the form of corruptible man and of birds and four-footed animals and crawling creatures.
