I don't know if this has been asked in the thread yet, but why was it that the Covenant decided that they wanted to eradicate humanity instead of incorporating them into the covenant like they did with the Grunts, Jackals, etc.

Humanity itself contradicted the Covenant religion on a very foundational level. Acknowledging their legacy with the Forerunners would have destroyed the Covenant.
