What happened to the other races after the Human-Covenant war? We now about the Brutes and Elites, but what of the others?

The vast majority of them returned to their home planets. The Unggoy stayed with whatever species/individual they were indentured to. If they were capable, they returned to their homeworld as well.

Home is home, no matter how much of a dump it is. Even the Unggoy understand this. You could say that the UNSC should abandon Australia because the Covenant leveled nearly every man-made structure.
