He never even got close to doing that. There's also the fact that he will die if he can't feed. Meaning he will feed on every Jedi and Sith he can get his hands on, regardless of whether they are on his side or not.

But he didn't "almost" do it. Don't put words in my mouth. As for devouring the Flood, not all of the Flood needs to be capable of using the Force, if a Force-user has been infected by this time. It is likely he would not be capable of consuming them.

Nobody in the Halo universe has an inherent ability to use the Force. None of them are connected by the Force. Nihilus consumes based on the Force. Therefore, he would not be capable of consuming Flood spores.

You don't need to be able to use the force to be connected to it. In Star Wars, it's essentially a fact of physics that all creatures have force energy and are connected to the force. Which would include the Halo universe.

You area otherwise that we aren't talking about Halo in the SW universe or SW in the Halo universe. Both universes are bound by what they have in their own universes. Which, of course, means that nobody in the Halo universe starts out connected to the force. If it did, the entire idea of the Gravemind consuming the ability to use the force is null, because he would already have the capacity. So choose one. Either he can gain the ability or he starts with it. Although your choice doesn't actually matter.

Then to put these two forces against each other is useless, because they're playing on two totally different level or physics. And as I was saying, all are connected to the force, but not all can't utilize it.

The Yuuzhon Vong couldn't be detected through the force, but force abilities still worked on them. So they are still connected to the Force, just couldn't be detected (they may have a weird connection to it).

In other words, using force on a separate object and then using the object against them however you see fit, or using things with actual physical consequences outside of an all permeating concept. IE - They don't have a requisite to be connected via the force for these to work. It's also quite clear about them being stripped form the force after the destruction of their world.
