So if we look closely at each menu, we can see clearly; The City, Chapter select, Bounty, Strike, Raid and faction wars.
So;
The City - Main hub, playable 'home base' in game menu sort of place of interacting with your party, going on missions, might be some kind of trading ground. Basically an interactive lobby.
Chapter Select - A clear way of telling that there is in fact a 'linear' story mode, assuming you play missions that are story related, solo or co-op, rather than going out of cooperative things just for fun.
Bounty - A "weekly" challenge, like halo? Extra loot and bonus items to be collected here?
Strike and Raid - Alternative game modes? (Raid being slightly more obvious, but strike being a space battle or assault game mode?)
Faction Wars - Clan battles, competitive multiplayer, PVP? (Also, any ideas on what a 'random hopper' is?)

A linear story with chapters/missions seems to conflict with the idea of the open world that Destiny is anticipated to be. Maybe "Chapters" is referring to something we don't know of yet ?
