What happens when someone gets "Composed" or when they turn into that orange dust, all I heard was that they turn digital

They are digitized. The disintegration is a byproduct of the intensive quantum scan the Composer emits that sublimates your organic consciousness into a digital state. The Composer then takes back the digital essences, and stores them or sends them elsewhere.

So it kinda takes your "brain" and moves it into storage?

Your brain is destroyed, but before that it is scanned and remapped into a digital state. Now of course, this enters an interesting dilemma. Is this digital essence actually you, or an exact replica? That really depends on your understanding and belief of consciousness.
