The other couple I'd potentially write is Maya and Chioma, but that'd essentially involve writing your own base Destiny lore, since the two are integral to the FWC machine, the birth of the Exos, humanity's involvement with the Vex, and Cayde's pre-Guardian history...
Not exactly respectful to mess with, given Bungie are still establishing that lore themselves.

They were some of the first to explore the Vex network and communicate directly with live Vex. After marrying, Maya left her wife at the Hyperion facility to help develop what later became the War Cult's future viewing machine at a facility in Lhasa, Tibet. Maya is the most likely candidate for the true identity of the Exo Stranger, (followed closely by Ana Bray.) She's also Cayde's pre-collapse crush. He worked as her security detail at Lhasa after being turned into an Exo.

Clovis are almost certainly responsible for developing the human -> Exo conversion process... The big question is why the Exo Stranger is pushing us to investigate it ourselves. What's she trying to tell us? I'd put money on it that you could pull history out of an Exo mind post-wipe if you tried. Perhaps that's her angle? Imagine how much would change if the Vanguard knew it was Rasputin that blew up the Traveller, and not the Darkness?

Everything beyond them launching their copies into the Vex network is TTK grimoire. A lot of people haven't bothered collecting all that yet.
