Do books exist that extend the story beyond what we have in the games? Or is the story being written alongside the games?

Yes they do. Everything in the book provides outside knowledge from the games

What about the ending stories for Chief or the Arbiter? Those will just be told through the games right, or will they be revealed in books before the games?
