Should I lower my expectation for the return of a UNSC vehicle in Halo 5? They would've already shown one... Right?
Also, why are they keeping forge under wraps?... They showed Halo 4's forge at a similar time around the previous launch year.

If you mean Air vehicle for the UNSC, there isn't one. As far as the other part, this forge is supposed to be extremely expansive and I think they'd rather have it as a surprise for their audience.
