For DS 1 I would recommend thief and focus most of your skill points on dex, endurance and vitality, unless you want a challenge. In which case I would say depraved and put your skill points wherever you want. For DS 2 I would recommend swordsman and focus most of your skill points into vitality, endurance and strength.
