Do weapons scale with the player, or what? I have a fire longsword and im wondering if I should continue upgrading it. I just killed the covetous demon.

They scale with stats. Usually strength and dex for swords. You can check the scaling by the letters on weapons stat page. A and S are the highest levels of scaling.
