It says you are missing two cards?! How do you get them?

Not glitched ghosts. I'm missing Mercury and Guardians Abilites. Mercury is currently unattainable, and you see above about guardian abilities. You can see which grimoire cards are acquired from ghosts, because they say "Ghost Fragment" in the card name.

How do some people have over 2800?

People with over 2800 are either on PlayStation and have access to their exclusive content, or have gone into unfinished areas and retrieved ghosts for future DLCs. Sorry for the late reply. Working, wishing I was playing Destiny! : D
