Logged in today to play, (PS5) had a message pop up regarding Cross play, my name has been changed to "Redacted0601".
Checked with my Cross play settings which shows my PC account as "Weeb, Slayer of Thots" and the PS5 name "OfficialWeeb".
I have closed the game and reopened, at which point the issue still persists.
I am not exactly sure of what to do, in order to get the name back to the account. The name of the account was the one linked with PC (Weeb, Slayer of Thots)

As there is no dedicated message for this, you just get a message about cross-play, but it is not actually anything to do with cross-play. I can understand the confusion. If you have name changes available, you can change to something else, or otherwise you'll have to wait for one of the infrequent times when new tokens are issued to everyone.
