Well, males cannot lay eggs and are therefore discarded. Neither of the links are more than a few short paragraphs, and if this is of any concern to you (as it appears to be) you should invest 3 or so minutes into reading them. For the male chicks, I'm okay with that. As long as it's instantaneous.
The cows, however... that is absurd. Are there any companies that officially don't do that sort of stuff?
If there are, good luck being able to reliably verify them. They aren't exactly open about their practices.
I don't think you can be certain the chicks are killed painlessly just, as you said, you can't be certain for a cow. But that is a decision you'll need to be honest with yourself about.
I should also add, as it needs to be shouted from every rooftop: coconut milk >>>>> cow milk.
Edit: not the gooey stuff in a can. It's on the same shelf as the soy/long life milks.
