How are people able to choose what grandmaster they want to do?
Are there things you have to do before you’re able to choose?

Also if you've subsequently completed any of the GMs after this, ie they are marked as complete on the gilded triumphs, then these are not available on the selector. So for me, the only two available on mine are The Corrupted and Exodus Crash, as I have completed the standard seal and done 4/6 GMs for the gilding.
